White Chocolate Grape Layered Sorbetto

Ingredients

1500g (52.9oz)
1000g (35.3oz)
500g (17.6oz)
15g (0.5oz)
100g (3.5oz)
30g (1.1oz)
140g (4.9oz)
250g (8.8oz)
15g (0.5oz)
as desired

Method of Preparation

  1. Combine all ingredients except in a large bucket.
  2. Mix well for 2-3 minutes using an immersion blender.
  3. Place in Hot Process machine or process immediately in batch freezer according to machine instructions.
  4. Extract sorbetto into gelato pan and transfer immediately to display case.
  5. Using the soft sorbetto, in a clean gelato pan spread a flat layer of Grape Sorbetto. Blast freeze until firm.
  6. Pour over Grape Sorbetto. Blast freeze until firm.
  7. Garnish as desired and transfer to display case to hold.
