Ingredients

85g (3.0oz)
55g (1.9oz)
80g (2.8oz)
55g (1.9oz)
260g (9.2oz)
200g (7.1oz)
54g (1.9oz)
22g (0.8oz)
120g (4.2oz)
15g (0.5oz)

Method of Preparation

  1. Bloom the gelatin in plenty of cold water. Set aside to hydrate.
  2. Combine the orange juice, , Boiron Pear Puree, sucrose, glucose syrup #1, and the sorbitol powder in a saucepan.
  3. Cook the combined ingredients to 116°C/241°F.
  4. Once the temperature has been reached, remove the saucepan from the heat and stop the cooking by adding the bloomed gelatin, which has previously been strained of excess water, the glucose syrup #2 and the tartaric acid solution.
  5. Color the mixture as desired to achieve an orange color.
  6. Deposit immediately into silicone molds that have been coated with a thin film of oil.
  7. Place the gummy candies in the refrigerator overnight to fully set.
  8. Remove from the refrigerator the next day and remove the gummies from the molds.
  9. Toss the gummies together to evenly coat them with the oil remaining on them from the molds.
  10. Store in an airtight container until needed.
