Coffee Crumb Cake

Method of Preparation

  1. Prepare desired cake pan by lining with parchment paper and spraying with pan spray.
  2. In a mixing bowl with the paddle attachment, mix cake flour, sugar, baking soda and salt on low speed until ingredients are combined.
  3. With mixer on low speed, add butter one piece at a time and continue mixing until mixture resembles moist crumbs with no visible butter pieces remaining.
  4. Add whole egg, , buttermilk and ; beat on medium high speed until light and fluffy, about 1 minute. Scrape down sides of bowl once while mixing.
  5. Pour batter into desired cake pan.
  6. Sprinkle crumb topping onto batter in an even layer.
  7. Bake at 163°C/325°F for about 35 to 40 minutes until crumb topping is golden brown and cake is baked through.

Method of Preparation

  1. Combine sugar, brown sugar and salt and break up any large chunks with a whisk.
  2. Stir in flour.
  3. In a mixer with the paddle attachment, paddle together the butter, and just until incorporated.
  4. Fold butter into dry mix with a rubber spatula.
  5. Top Coffee Crumb Cake with Coffee Crumb Topping.
