Method of Preparation

  1. Bring water and salt to a boil.
  2. Add rice and boil for 5 minutes.
  3. Strain rice and rinse with water. In another pot bring milk, , and to a boil.
  4. Add rice and return to a boil.
  5. Reduce heat and simmer for 10 minutes.
  6. Remove from the stove and add the brown sugar, lemon zest, ground clove, ginger, the raisins from and the cream #1.
  7. Cool in refrigerator.
  8. Whip cream #2 to soft peaks, and fold into cold rice pudding.
  9. Portion into desired glasses and garnish with .
