Vanilla Cake

Method of Preparation

  1. Preheat oven to 176°C/350°F.
  2. Butter and flour a 6-inch cake pan.
  3. Sift all of the dry ingredients together.
  4. Combine all of the liquid ingredients.
  5. Add the liquid ingredients to the dry ingredients in the bowl of a mixer and beat with a paddle on medium speed just until combined, about 30 seconds.
  6. Pour batter into prepared pan and bake for 25-30 minutes.
  7. Allow cake to cool slightly and remove from pan.
  8. When cake is cool, trim the top and cut cake into 3 equal layers.

Method of Preparation

  1. In a mixing bowl fitted with a whip attachment, add egg whites.
  2. Place sugar and water in a pot on the stove and cook to 118°C/244°F.
  3. Very slowly add hot sugar to egg whites while whipping on medium-high speed.
  4. In a separate bowl, soften butter in a mixer using a paddle. Add .
  5. Add butter to meringue in small additions while mixing on low speed.
  6. Mix until evenly incorporated; use as needed in final assembly.

Method of Preparation

  1. Pipe a small amount of Strawberry Buttercream on a cake board and place a layer of Vanilla Cake on top.
  2. Spread a thick layer of on top of the cake.
  3. Pipe a layer of Strawberry Buttercream and cover with the second layer of Vanilla Cake.
  4. Spread a thick layer of on top of the cake.
  5. Pipe a layer of Strawberry Buttercream and cover with the final layer of Vanilla Cake.
  6. Dust the top of the cake with snow sugar or powdered sugar and garnish with fresh strawberries.
