Lime Pannacotta

Method of Preparation

  1. In a pot, heat the whole milk and lime zest to 40°C/104°F.
  2. Remove from heat; whisk in ; whisk in heavy cream.
  3. Place in desired cup, place in refrigerator until set.

Pistachio Pain de Genes

160g (5.6oz)
40g (1.4oz)
55g (1.9oz)
100g (3.5oz)
20g (0.7oz)
30g (1.1oz)

Method of Preparation

  1. In a mixer fitted with a paddle attachment, cream the , and unsalted butter until well combined.
  2. Slowly incorporate the eggs one at a time, scraping the bowl down in-between each addition.
  3. Add , followed by salt.
  4. Add the flour and baking powder and mix just until incorporated.
  5. Spread into desired baking mold and bake at 150°C/300°F for 12-15 minutes.

Pastry Cream

Method of Preparation

  1. Combine sugar and in a bowl; whisk in a small amount of milk to dissolve the dry ingredients.
  2. Heat milk and on the stove.
  3. Slowly whisk hot milk into remaining ingredients; transfer mixture back to the pot and return to the stove.
  4. Bring to a simmer, stirring constantly; cook for about 1 minute.
  5. Cover and allow to cool.
  6. Use as needed in Vanilla Foam.

Method of Preparation

  1. Combine , and skim milk.
  2. Mix in pastry cream and heavy cream.
  3. Pour into foam gun and charge; store cold.
  4. Use as needed.

  4. Top with Vanilla Foam.
