Method of Preparation

  1. Line two dozen cupcake tins with cupcake papers.
  2. Sift together the cake flour, baking powder and salt. Place the dry ingredients in the bowl of an electric mixer fitted with a paddle attachment.
  3. Add the shortening to the dry ingredients and mix on low speed for 2 minutes.
  4. Add the sugar to the mixing bowl and mix for 1 minute.
  5. Combine whole milk #1, and the red food color.
  6. Add the liquid mixture to the dry ingredients slowly; stopping to scrape the bowl frequently to ensure a smooth paste is made.
  7. In the bowl of a food processor, puree the until it is completely smooth.
  8. Add the whole milk #2 and the whole eggs to the food processor and combine the ingredients until smooth.
  9. Add this mixture slowly to the smooth paste made in the mixer bowl to maintain a smooth texture.
  10. Fill the cupcake papers half full.
  11. Bake at 160°C/320°F for 18 minutes or until just golden and a skewer inserted in the center comes out clean.
  12. Cool completely before decorating.

Method of Preparation

  1. In a mixing bowl fitted with a whip attachment, add sugar and water.
  2. Whip until sugar is dissolved.
  3. Add and whip until peaks are obtained.
  4. Soften butter in a mixer using a paddle.
  5. Add butter to Meringue in small additions while mixing on low speed.
  6. Add to buttercream.
  7. Add to buttercream in additions while scraping down between additions.
  8. Mix until evenly incorporated. Use as needed in final assembly.

  1. Use an apple corer to remove the center of the cupcake.
  2. Fill cupcake with .
  3. Top with piped Strawberry Buttercream Frosting.
