Ingredients

90g (3.2oz)
90g (3.2oz)
360g (12.7oz)
30g (1.1oz)
120g (4.2oz)
90g (3.2oz)
180g (6.3oz)

Method of Preparation

  1. In the bowl of an electric mixer, paddle together the flour and soft butter until smooth and homogeneous.
  2. Heat the milk to a simmer.
  3. Whisk in the smooth butter and flour mixture.
  4. Whisk constantly on medium heat until the mixture boils and thickens. Cook an additional 2-3 minutes to cook out any raw flour taste.
  5. Remove from the heat and add in .
  6. Transfer this mixture to the bowl of an electric mixer and using the paddle, mix on medium-low speed until cooled.
  7. Add in the egg yolks slowly until well incorporated.
  8. Add half of the sugar to the egg whites to the bowl of an electric mixer and, using the whip, beat on medium speed until soft peaks form.
  9. Slowly add in the remaining sugar to stiffen the meringue.
  10. Fold the meringue into the thickened milk mixture in thirds, being careful not to deflate the meringue.
  11. Portion into buttered and sugared ramekins and bake at 188°C/370°F for about 12-15 minutes, or until the soufflé is well risen and the tops are lightly golden brown.
  12. Dust the tops with confectioner's sugar and serve immediately.
