Ingredients

2500g (88.2oz)
500g (17.6oz)
920g (32.5oz)
as needed

Method of Preparation

  1. Blend milk, cream and in a bucket using an immersion blender.
  2. Place into a batch freezer and freeze according to machine instructions.
  3. Extract into a pan, making sure the top is flat as flat as possible.
  4. Place pan into blast freezer
  5. Slice strawberries
  6. Arrange strawberries on the sides of the gelato pan, and form them into the shape of a maple leaf in the center of the pan to resemble the Canadian flag.
