Passion Fruit Caipirinha Frozen Pops

Method of Preparation

  1. Combine the first six ingredients in a large plastic bucket.
  2. Mix well for 2-3 minutes using an immersion blender.
  3. Place in Hot Process machine or process immediately in gelato machine according to manufacturer instructions.
  4. Extract the sorbet into a frozen pan.
  5. Transfer the sorbet to a freezer.
  6. Place into the blast freezer on a pan and allow the mold to freeze for fifteen minutes.
  7. Fill a piping bag with Passion Fruit Sorbetto.
  8. Remove the mold from the blast freezer. Fill the mold with Passion Fruit Sorbetto. Insert into the mold, then clean the mold with an offset spatula.
  9. Return the mold to the blast freezer and allow the frozen pops to harden for at least one hour.
  10. Once the frozen pops have hardened, remove them from the mold and place onto a previously frozen sheet tray lined with parchment paper.
  11. Place the frozen pops into a holding cabinet for at least one hour.
  12. Use as needed in final assembly.
