Sweet and Salty Gelato - Hot Process

Method of Preparation

  1. Melt and lightly toss the chopped pretzel pieces in it.
  2. Spread the coated pretzel pieces onto a sheet pan lined with parchment paper and place in the freezer until ready to use.
  3. In a large mixing container combine the milk, cream and .
  4. Mix together the sugar, , and to remove any lumps.
  5. With an immersion blender, combine the liquid ingredients while slowly adding the dry ingredients.
  6. Mix well for 2-3 minutes.
  7. Place in Hot Process machine and freeze according to the machine instructions.
  8. Extract 1/3 of the gelato at a time, stopping to fold in , and chopped pretzels.
