Chocolate Gelato - Hot Process

3000g (105.8oz)
150g (5.3oz)
540g (19.0oz)
60g (2.1oz)

Method of Preparation

  1. Combine all ingredients in a large bucket.
  2. Mix well for 2-3 minutes using an immersion blender.
  3. Place in Hot Process machine and process according to machine's instructions.

Chocolate Gelato - Cold Process

3000g (105.8oz)
150g (5.3oz)
540g (19.0oz)
60g (2.1oz)
300g (10.6oz)
400g (14.1oz)

Method of Preparation

  1. Combine all ingredients in a large bucket.
  2. Mix well for 2-3 minutes using an immersion blender.
  3. Place in batch freezer and process according to machine's instructions.

Chocolate Milkshake

100g (3.5oz)
25g (0.9oz)

Method of Preparation

  1. In a small blender, mix ingredients to a pourable consistency.
  2. Use as needed in final assembly.

Italian Meringue

220g (7.8oz)
75g (2.6oz)
150g (5.3oz)
1g (0.04oz)

Method of Preparation

  1. Combine sugar and water in a pot, bring to a boil and cook to 115˚C/240˚F.
  2. While sugar is cooking, begin whipping egg whites with cream of tartar.
  3. When sugar reaches correct temperature, slowly pour sugar into whipping egg whites.
  4. Continue whipping until egg whites are cool to the touch.

  1. In a glass, pour a layer of .
