Strawberry Sorbetto

2800g (98.8oz)
1320g (46.6oz)

Method of Preparation

  1. Combine all ingredients in a large plastic bucket.
  2. Mix well for 2-3 minutes using an immersion blender.
  3. Pour into a batch freezer and process according to manufacturer's instructions.

Lemon Sorbetto

  3. Pour into a batch freezer and process according to manufacturer's instructions.

Blueberry Sorbetto

1500g (52.9oz)
1000g (35.3oz)
550g (19.4oz)
10g (0.4oz)
100g (3.5oz)
140g (4.9oz)

Method of Preparation

  1. Combine all ingredients in a large plastic bucket.
  2. Mix well for 2-3 minutes using an immersion blender.
  3. Place in Hot Process machine or process immediately in batch freezer according to machines instructions.

Method of Preparation

  1. Place into the blast freezer on a pan and allow to freeze for fifteen minutes.
  2. Fill piping bags with the Lemon Sorbetto, Strawberry Sorbetto and Blueberry Sorbetto.
  3. Remove the mold from the blast freezer. Fill 1/3 of the mold with the Strawberry Sorbetto. Place the mold back into the blast freezer for 5 minutes.
  4. Remove the mold from the blast freezer. Fill 1/3 of the mold with Lemon Sorbetto. Place the mold back into the blast freezer for 5 minutes.
  5. Remove the mold from the blast freezer. Fill the remaining 1/3 of the mold with the Blueberry Sorbetto.
  6. Insert the wooden sticks into the mold, and then clean the mold with an offset spatula.
  7. Return the mold to the blast freezer and allow the pops to harden for at least one hour.
  8. Once the frozen pops have hardened, remove them from the mold and place onto a previously frozen sheet tray lined with parchment paper.
  9. Wrap well with plastic wrap, and store in freezer until ready to use.
