Salted Peanut Gelato - Cold Process

Method of Preparation

  1. In a large mixing container combine the milk and heavy cream.
  2. Mix together the sugar, and .
  3. With an immersion blender, combine the liquid ingredients while slowly adding the dry ingredients. This includes the crushed candy bars.
  4. Mix well for 2-3 minutes.
  5. Process in a batch freezer according to manufacturer's directions.
  6. During extraction, incorporate , melted and roasted peanuts into the gelato.

Method of Preparation

  1. In a large mixing container combine the milk and heavy cream.

Method of Preparation

  1. Pipe soft gelato into desired frozen pop mold.
  2. Insert sticks and place in blast freezer until hard.
  3. Unmold quickly and place in a regular freezer for 15 minutes.
  4. Melt in a container in the microwave.
  5. Dip frozen pops in and allow excess to drip off.
  6. Place frozen pops on a sheet pan lined with parchment paper and store in freezer until ready to eat.
