Yogurt Mousse Base

Method of Preparation

  1. Combine all ingredients in a mixing bowl with the whip attachment.
  2. Whip to medium peaks and set aside.

120g (4.2oz)
40g (1.4oz)
21g (0.7oz)

4g (0.1oz)
60g (2.1oz)
150g (5.3oz)
20g (0.7oz)
20g (0.7oz)

Method of Preparation

  1. Combine and powdered sugar to break up any large pieces.
  2. Stir together oats, almonds, (with powdered sugar mixed in), pumpkin seeds, sunflower seeds, pecans and salt in a large bowl.
  3. In a sauce pot, combine butter, honey, and and heat over low heat until butter is melted and mixture is liquid.
  4. Pour over dry ingredients and stir until well combined.
  5. Spread the granola evenly into a thin layer on a parchment lined sheet pan.
  6. Bake at 275°F/135°C, stirring every 5 minutes until golden brown and crisp.
  7. Allow to cool before storing in an airtight container.

Final Assembly

  1. Pipe yogurt mousse base into a clear glass to fill it about 1/2 full.
  2. Sprinkle about ¼ inch of cinnamon nut granola on top of mousse-base yogurt.
  3. Pipe yogurt mousse base into the glass until almost full.
  4. Garnish with fresh fruit as desired.
