Method of Preparation

  1. Slice and brown bread in the oven.
  2. Add milk to toasted bread and allow to rest over night in the refrigerator.
  3. Strain out bread to get 3000 grams of infused milk.
  4. Add the cream, brown butter, and .
  5. Mix together the rest of the dry ingredients and add to liquid.
  6. Mix well with an immersion blender for 2-3 minutes.
  7. Heat to 85°C/185°F, then freeze in a batch freezer.
Notes to Consider: This recipe is only hot process because it has brown butter in it, which must be heated in order for the recipe to function properly.
