Ingredients

2000g (70.5oz)
500g (17.6oz)
100g (3.5oz)
100g (3.5oz)
150g (5.3oz)
300g (10.6oz)
50g (1.8oz)
50g (1.8oz)

Method of Preparation

  1. Combine the water, sugar and in a microwave safe bowl and heat until the sugar is dissolved and the syrup is hot. Pour over the carrots and allow the carrots to soften in the hot syrup for several minutes. Set aside to cool.
  2. Once the carrots are cool, strain through a sieve and press them firmly to remove as much liquid as possible.
  3. Combine all the remaining ingredients with the drained carrots.
  4. Mix well for 2-3 minutes using an immersion blender.
  5. Place in ice cream machine and process according to machine instructions.
