Cold Process - Beginner

3000g (105.8oz)
300g (10.6oz)
540g (19.0oz)
60g (2.1oz)
300g (10.6oz)
8g (0.3oz)

Method of Preparation

  1. Combine cardamom and milk and allow to infuse overnight.
  2. Combine all ingredients in a large plastic bucket.
  3. Mix well for 2-3 minutes using an immersion blender.
  4. Strain.
  5. Place in batch freezer and process according to machine's instructions.

Hot Process - Intermediate

3000g (105.8oz)
300g (10.6oz)
540g (19.0oz)
60g (2.1oz)
150g (5.3oz)
150g (5.3oz)
8g (0.3oz)

Method of Preparation

  1. Combine all ingredients except cardamom in a large plastic bucket.
  2. Mix well for 2-3 minutes using an immersion blender.
  3. Place in Hot Process machine and process according to machine's instructions, or heat on a stovetop to 85°C/185°F.
  4. Add cardamom and allow to infuse for 30 minutes.
  5. Blend the mix with the cardamom using an immersion blender, then strain.
  6. Process in a batch freezer according to manufacturer's instructions.
