Cinnamon Meringue

125g (4.4oz)
250g (8.8oz)
300g (10.6oz)
10g (0.4oz)

Method of Preparation

  1. In a mixer with the whip attachment, combine the sugar, water and
  2. Whip together to dissolve.
  3. Add to mixer and whisk by hand to dissolve powder.
  4. Whip on medium-high to high speed until mixture reaches full volume.
Notes to Consider: You may replace 5-Star Chef Pastry SelectTM Cinnamon Compound with PreGel Cinnamon Traditional Paste.

110g (3.9oz)
90g (3.2oz)
10g (0.4oz)
40g (1.4oz)

Method of Preparation

  1. Combine the water, sugar and in a small saucepan and bring to a boil.
  2. Chill the green apple simple syrup completely
  3. Combine the green apple simple syrup with the whiskey and ice cubes in a cocktail shaker.
  4. Shake well.
  5. Strain into a chilled sour glass with fresh ice cubes.
  6. Pipe Cinnamon Meringue on top to fill the glass and level with a small spatula.
  7. Use a torch to brûlée the top of the meringue and garnish with a slice of fresh green apple and a straw.
