Method of Preparation

  1. In a stand-up mixer fitted with the paddle attachment, cream together the vegan butter with brown and granulated sugars on medium speed for 2 minutes.
  2. Add applesauce and and beat to combine.
  3. In a large bowl combine oats, flour, baking soda, and salt.
  4. With the mixer on low, add the dry ingredients to the butter/sugar mixer in 3 batches, scraping down the sides of the bowl between each batch.
  5. Once the dough has formed fold in the raisins and chill the dough for 30 minutes.
  6. Scoop the dough with a purple scoop onto a silpat and bake at 190°C/375°F for 9-10 minutes.
  7. Remove from oven and let cool before enjoying.
