Chocolate Ice Cream

2000g (70.5oz)
500g (17.6oz)

Method of Preparation

  1. In a large container, combine all ingredients.
  2. Mix well with an immersion blender for 2-3 minutes.
  3. Place in gelato batch freezer and follow the machine instructions.
  4. Extract into a pan and fill a piping bag to easily fill molds.
  5. Freeze until completely frozen and then unmold and stick a toothpick in the center of each one.
  6. Quickly dip into , allow excess to drip off and freeze again.
  7. Heat some until just melted.
  8. Dip the graham coated ice cream into the stracciatella and then freeze completely.
  9. Remove the toothpicks from each one and keep in the freezer while prepping your marshmallow.

Method of Preparation

  1. Prepare a silicone mold on a sheet pan, spray lightly with pan spray and set aside.
  2. Combine the PreGel Five Star Chef Gelatin Base and water #1 in the bowl of a stand mixer. Whisk well to combine and set aside to hydrate.
  3. Combine water #2, sugar, glucose, and PreGel Five Star Chef Coconut Pannacrema in a saucepan and bring to a boil.
  4. Pour the boiling liquid over the hydrated PreGel Five Star Chef Pastry Gelatin Base and whisk on low speed until the gelatin base is fully dissolved. Whip on high speed until full volume is achieved, usually 33-35°C/91-95°F.
  5. Pour the marshmallow into a piping bag and fill each cavity ¾ full.
  6. Place the ice cream insert into the center and allow the marshmallow to cover the top; use an pan sprayed offset spatula if needed.
  7. Freeze overnight before unmolding.

Final Assembly

  1. Place a gram cracker down and add a few grams of Valrhona Cacao Nibs on top.
  2. Place the frozen marshmallow on top and torch until golden.
  3. Place another piece of graham cracker on up and enjoy!
  4. Serve to order.
