Almond Macarons (from PreGel Mix)

500g (17.6oz)
100g (3.5oz)
1/8 tsp (0.6oz)

Method of Preparation

  1. In the bowl of an electric mixer, combine PreGel Macaron Mix with food color, and mix with a paddle on low speed until incorporated.
  2. Add warm water, and beat on medium speed for 4 minutes.
  3. Pipe macaron batter onto a flat sheetpan lined with a Silpat.
  4. Allow to rest at room temperature for at least 1 hour.
  5. Bake at 135°C / 266°F for 18-22minutes, in a vented oven, with fan speed on low to medium.
Notes to Consider: If your oven does not have a vent to open, continue with standard baking instructions plus: halfway through baking, gently crack open the oven door to allow steam to escape for about 20 seconds. Close the oven door gently and continue baking per standard instructions until macarons are done.

Method of Preparation

  1. Combine all ingredients with an immersion blender.
  2. Let mix age and hydrate for ½ hour (optional).
  3. Pour into a batch freezer and freeze accordingly.
  4. Extract into a sheet pan and freeze completely.

Assembling the Macaron Ice Cream Sandwich

Final Assembly

  1. Heat a ring cutter the same size of you macaron shells and cut out disks from your sheet pan of ice cream.
  2. Place them between the macaron shells and place back in the freezer.
  3. Dip in and quickly add sprinkles.
  4. Store in the freezer or in a display case.
