Pistachio Ice Cream

Method of Preparation

  1. Combine all ingredients with an immersion blender.
  2. Let mix age and hydrate for ½ hour (optional).
  3. Pour into a batch freezer and freeze accordingly.

Pistachio Donut Glaze

142g (5.0oz)
21g (0.7oz)
14g (0.5oz)
28g (1.0oz)
14g (0.5oz)

Method of Preparation

  1. In the bowl of a mixer fitted with the whip attachment, combine together all of the ingredients, adding additional liquid or confectioner’s sugar as needed to adjust the desired consistency.

Final Assembly

  1. Glaze your donut if desired.
  2. Cut your donut in ½ and place a scoop of pistachio ice cream inside.
  3. Dip in PreGel Pate a Glacer if desires and serve.
