Hispanic Mole Sauce for Roasted Pork

Method of Preparation

  1. Heat oil in large saucepan over medium low heat.
  2. Add onion, garlic, oregano, cumin, and cinnamon.
  3. Cover and cook until onion is almost tender, stirring occasionally, about 10 minutes.
  4. Deglaze with tequila and set fire.
  5. Move to a deep sauce pot.
  6. Mix in chili powder and flour, stir for 3 minutes.
  7. Gradually whisk in chicken broth.
  8. Increase heat to high.
  9. Boil until reduced, about 35 minutes, stirring occasionally.
  10. Whisk in PreGel Prontociocc Traditional Paste (Chocolate) - 28322; season with salt and pepper if desired.

Sous Vide Pork Loin

Method of Preparation

  1. Set immersion circulator to 131°F/55°C (for medium rare).
  2. Vacuum together the pork, one bunch of thyme.
  3. Cook in water bath for 3-4 hours.
  4. Take pork out of the bag and let air dry for several minutes.
  5. Heat a pan to smoking and pour in a little bit of the oil.
  6. Sear all sides of the pork until a nice crust appears.
  7. Move pork to side of the pan and drop in butter and a bundle of thyme.
  8. Baste the loin with the brown butter.
  9. Let rest on a drip rack for 5 minutes before slicing.
