Coconut Sushi Rice

453g (16.0oz)
37g (1.3oz)
24g (0.8oz)
12g (0.4oz)
60g (2.1oz)

Method of Preparation

  1. Rinse rice until water runs clear.
  2. Place the rice and water in a pot and bring to a boil.
  3. As soon as it has reached a boil, cover and turn to lowest setting and let cook for 15 minutes.
  4. After 15 minutes remove from heat and let stand for 10 minutes.
  5. While this is resting mix together remaining ingredients and warm until combined and sugar is melted.
  6. Mix the coconut mixture into the rice folding gently until all rice is coated.
  7. Let come to room temperature before using to make sushi.

Method of Preparation

  1. Place a cut sheet of Nori on the board.
  2. Cover with Coconut Sushi Rice from end to end in a thin even layer.
  3. Layer thinly sliced strawberries and kiwi over rice.
  4. Place a sheet of plastic wrap over fruit and gently flip to the other side.
  5. Layer strips of mango and watermelon in a small line in the Nori.
  6. Using the mat roll the Maki tightly.
  7. Let set in the fridge for at least 10 minutes before slicing.
