Method of Preparation

  1. Combine the milk and the lavender flowers and bring to a simmer. Cover the pot and steep for 30 minutes. Strain out the lavender flower and discard.
  2. Mix the infused milk with the remaining ingredients and mix well for 2-3 minutes using an immersion blender.
  3. Place in ice cream machine and process according to machine instructions.

Final Assembly

  1. Using a piping bag with soft gelato, pipe desired amount on one cookie.
  2. Sandwich with the other cookie.
  3. Freeze until hard.
Notes to Consider: Optional: you may use PreGel Coriandolina® Coatings to dip sandwiches in to create a flavored coating around the outside of the ice cream sandwich.
