Method of Preparation

  1. Mix eclair base with hot water in a planetary mixer, then knead at medium-high speed for 10 minutes using the paddle attachment until the mix is smooth and homogenous.
  2. Allow to rest for 5-10 minutes.
  3. Pipe onto perforated baking mats on a baking tray using a star nozzle.
  4. Spray the surface with water before baking.
  5. Bake at 175°C/347°F for 20 minutes in vented convection oven, or at 180°-200°C/302°-392°F for 22 minutes in a convection oven with an open valve.
