Method of Preparation

  1. Combine all ingredients in a large bucket.
  2. Mix well for 2-3 minutes using an immersion blender.
  3. If making dots style frozen product, place the gelato mixture into a squeeze bottle or syringe tube before dripping into a bath of liquid nitrogen to create frozen pearls.
  4. If freezing the gelato using liquid nitrogen in a standard counter top mixer with a paddle, simply place the amount of base into the mixture bowl that is desired and pour in liquid nitrogen in stages on low speed until the product is frozen.
