Cold Process - Vanilla

3000g (105.8oz)
150g (5.3oz)
540g (19.0oz)
60g (2.1oz)
300g (10.6oz)
400g (14.1oz)

Method of Preparation

  1. Combine all ingredients in a large plastic bucket.
  2. Mix well for 2-3 minutes using an immersion blender.
  3. Place in the batch freezer and process according to manufacturer's instructions.

Cold Process - Orange

1500g (52.9oz)
600g (21.2oz)
400g (14.1oz)
550g (19.4oz)
10g (0.4oz)
100g (3.5oz)
140g (4.9oz)
130g (4.6oz)
20g (0.7oz)

Method of Preparation

  1. Combine all ingredients in a large plastic bucket.
  2. Mix well for 2-3 minutes using an immersion blender.
  3. Place in the batch freezer and process according to manufacturer's instructions.

Method of Preparation

  1. Extract the vanilla gelato into the pan, then fill piping bags. Place in the display case.
  2. Extract 1/3 of the orange sorbetto. Squeeze the vanilla gelato on top, and then fold it into sorbetto.
  3. Repeat until all the orange sorbetto is extracted.

130g (4.6oz)

  3. Place in the batch freezer and process according to manufacturer's instructions.
