Cold Process

3000g (105.8oz)
150g (5.3oz)
540g (19.0oz)
60g (2.1oz)
300g (10.6oz)
300g (10.6oz)

Method of Preparation

  1. Combine the first six ingredients in a large plastic bucket.
  2. Mix well for 2-3 minutes using an immersion blender.
  3. Place in the batch freezer and process according to manufacturer's instructions.
  4. Extract the gelato and immediately place it in the display case.
  5. In order to make the first layer, pour some of the gelato previously extracted into a new pan and spread it creating a flat surface. Place it in the blast freezer and wait until it hardens.
  6. Pour the on top to finalize the first layer and place it back in the blast freezer.
  7. Pour more of the gelato previously extracted on top of the first layer and spread it creating a flat surface.
  8. Pour the on top to finalize the second layer and place it back in the blast freezer.
  9. Place the pan in the display case.

  6. Pour the on top to finalize the first layer and place it back in the blast freezer.
  7. Pour more of the gelato previously extracted on top of the first layer and spread it creating a flat surface.
  8. Pour the on top to finalize the second layer and place it back in the blast freezer.
  9. Place the pan in the display case.
