Cold Process

3000g (105.8oz)
150g (5.3oz)
540g (19.0oz)
60g (2.1oz)
300g (10.6oz)

As desired

Method of Preparation

  1. Combine the first six ingredients in a large plastic bucket.
  2. Mix well for 2-3 minutes using an immersion blender.
  3. Place in the batch freezer and process according to manufacturer's instructions.
  4. Extract the gelato and place it straight in the display case.
  5. In order to make the first layer, pour some of the gelato previously extracted into a new pan, spread it and place it in the blast freezer.
  6. Pour the on top to finalize the first layer and place it back in the blast freezer.
  7. Pour more of the gelato previously extracted on top of the first layer and place it in the blast freezer.
  8. Pour the on top to finalize the second layer and place it back in the blast freezer.
  9. Place the pan in the display case.
