Green Tea Gelato

Method of Preparation

  1. In a large bucket, combine milk and and mix well.
  2. Place mix in a batch freezer and process according to manufacturer’s instructions.

Green Tea Foam Delight

150g (5.3oz)
500g (17.6oz)
24g (0.8oz)

Method of Preparation

  1. Combine all ingredients in a blender and mix until homogenous.
  2. Place into the or and charge with 1 to 2 charges depending on the desired consistency.

Coconut Crumble

150g (5.3oz)
150g (5.3oz)
75g (2.6oz)
120g (4.2oz)
100g (3.5oz)
180g (6.3oz)
2g (0.1oz)

Method of Preparation

  1. Place all ingredients in a 5qt mixer with a paddle and mix at a low speed until loose and crumbly.
  2. Spread by hand on a sheet pan lined with parchment paper.
  3. Bake at 160°C/320°F until golden brown.

Method of Preparation

  1. On desired plate/bowl, spoon some of the Coconut Crumble.
  2. Roll a scoop of Green Tea Gelato in some desiccated coconut, and place it on top of the crumble.
  3. Using the iSi Gourmet Whip or iSi Thermo Whip, pipe some Green Tea Foam Delight around the scoop of gelato.
  4. Dust lightly with matcha powder if desired.
