Toasted Marshmallow Gelato

Method of Preparation

  1. In a large bucket, combine milk and and mix well.
  2. Place mix in batch freezer and process according to manufacturer’s instructions.

Chocolate Cake

300g (10.6oz)
150g (5.3oz)
225g (7.9oz)

Method of Preparation

  1. Combine all ingredients in the bowl of a stand mixer fitted with the whisk attachment.
  2. Whip until mix is creamy and all powder is dissolved.
  3. Spread evenly onto a ½ sheetpan.
  4. Bake at 185°C/365°F for about 8-12 minutes.
  5. Allow to cool, and then cut cake into desired shape to fit verrines.

Method of Preparation

  1. Pipe a layer of into the bottom of desired verrine.
  2. Place a piece of chocolate cake on top of the .
  3. Fill remaining portion of verrine with Toasted Marshmallow Gelato, leaving space at the top for topping.
