Belgian Waffle

180g (6.3oz)
210g (7.4oz)
3g (0.1oz)
2 each (2 each)
15g (0.5oz)
7.5g (2.6oz)
90g (3.2oz)

Method of Preparation

  1. In a large bowl combine together the sparkling water, milk, yeast, yolks and sugar.
  2. Sift all of the remaining dry ingredients and whisk them into the wet ingredients until smooth and homogenous.
  3. Add the melted butter.
  4. Whip the egg whites to medium firm peaks and fold into the batter. Cover and let it rise until doubled, about 40 minutes.
  5. Cook in a pre-heated waffle iron when ready to consume.

Tres Leches Soaking Liquid

125g (4.4oz)
125g (4.4oz)

Method of Preparation

  1. Whisk together all ingredients and keep refrigerated until needed for use.

Caramelized Bananas

100g (3.5oz)
2 each (2 each )
10g (0.4oz)

Method of Preparation

  1. In a small pan, dry caramelize the sugar until a very dark caramel is reached.
  2. Add in the fresh diced bananas and stir to coat in the caramel.
  3. Add in the rum to deglaze the pan and allow the mixture to cool before using it.

Vanilla Mousse

75g (2.6oz)
100g (3.5oz)
500g (17.6oz)
25g (0.9oz)

Method of Preparation

  1. In a 5 quart mixing bowl, combine all ingredients.
  2. Whip to desired peaks and use as needed.

Method of Preparation

  1. Using the desired glass, cut a round portion of the pre-cooked Belgian waffle and soak it in the Tres Leches Soaking Liquid until it is fully absorbed.
  2. Place the soaked waffle into the glass and top it with a layer of the caramelized bananas.
  3. Fill the remaining portion of the glass with the Vanilla Mousse and refrigerate until ready to serve
