Method of Preparation
- In a large bowl combine together the sparkling water, milk, yeast, yolks and sugar.
- Sift all of the remaining dry ingredients and whisk them into the wet ingredients until smooth and homogenous.
- Add the melted butter.
- Whip the egg whites to medium firm peaks and fold into the batter. Cover and let it rise until doubled, about 40 minutes.
- Cook in a pre-heated waffle iron when ready to consume.

- Whisk together all ingredients and keep refrigerated until needed for use.
Caramelized Bananas

- In a small pan, dry caramelize the sugar until a very dark caramel is reached.
- Add in the fresh diced bananas and stir to coat in the caramel.
- Add in the rum to deglaze the pan and allow the mixture to cool before using it.

- In a 5 quart mixing bowl, combine all ingredients.
- Whip to desired peaks and use as needed.
Method of Preparation
- Using the desired glass, cut a round portion of the pre-cooked Belgian waffle and soak it in the Tres Leches Soaking Liquid until it is fully absorbed.
- Place the soaked waffle into the glass and top it with a layer of the caramelized bananas.
- Fill the remaining portion of the glass with the Vanilla Mousse and refrigerate until ready to serve
