Raspberry Vinaigrette

Method of Preparation

  1. Combine together the red wine vinegar, , Dijon mustard, salt and pepper in a blender.
  2. Slowly drizzle in the olive oil in a steady stream allowing the mixture to emulsify properly.
  3. Reserve under refrigeration.

Tomato Belgian Waffles

Method of Preparation

  1. In a large bowl combine together the sparkling water, milk, yeast, yolks, sugar, salt, black pepper and tomato paste.
  2. Sift all of the remaining dry ingredients and whisk them into the wet ingredients until smooth and homogenous.
  3. Add the melted butter.
  4. Whip the egg whites to medium firm peaks and fold into the batter. Cover and let it rise until doubled, about 40 minutes.
  5. Cook in a pre-heated waffle iron when ready to consume.
  6. Garnish the waffle with the mixed green salad, raspberry vinaigrette and goat cheese crumbles.
