Method of Preparation

  1. Combine together the salt, sugar and butter in a mixer with the paddle attachment.
  2. Add yolks and .
  3. Add sifted flour and baking powder, mix until well combined.
  4. Roll between two Silpats to a thickness of ¼ inch.
  5. Chill.
  6. Cut to desired shape.
  7. Bake at 160˚C / 320˚F for approximately 10-15 minutes.

Method of Preparation

  1. In the bowl of your electric mixer, beat the confectioner’s sugar and with the warm water on medium to high speed for 5-7 minutes.
  2. If necessary to get the right consistency, add more or less powdered sugar or more or less water.
  3. To cover or “flood” the entire surface of the cookie with the icing, the proper consistency is reached when you lift the beater out of the icing, letting excess fall back into the bowl and it remains on the surface for a few seconds before disappearing.
  4. Place the colored icings into piping bags with small tips until ready to use.
