Strawberry Gelato

Method of Preparation

  1. Combine together both ingredients in a large plastic container and blend with an immersion blender until homogenous.
  2. Pour the mixture into the desired batch freezer and process according to the manufacturer’s instructions.

Vanilla Cake Crumble

160g (5.6oz)
120g (4.2oz)
19g (0.7oz)
0.6g (0.2oz)
115g (4.1oz)

Method of Preparation

  1. Combine all ingredients in a mixer with the paddle attachment.
  2. Mix together until mixture forms small crumbs (do not over mix).
  3. Bake in a 162°C/325°F oven for approximately 12-15 minutes or until the mixture is golden brown.
  4. Allow to cool at room temperature.
  5. Once the product is cool to the touch, grind the crumble in a food processor until fine crumbs are achieved.

Method of Preparation

  1. Place the Pavoni® Frozen Pop Mold- Malibu into the freezer on a pan and allow too freeze for fifteen minutes.
  2. Fill a piping bag with the Strawberry Gelato.
  3. Remove the mold from the freezer. Fill the mold with the Strawberry Gelato. Insert the PreGel Frozen Pop Sticks into the mold, and then clean the mold with an offset spatula.
  4. Return the mold to the freezer and allow the pops to harden for at least one hour.
  5. Once the pops have hardened, remove them from the mold and place onto a previously frozen sheet tray lined with parchment paper.
  6. Place the pops into the freezer for one hour.
  7. Melt the PreGel Coriandolina® Coating – Strawberry to 30°C/86°F.
  8. Remove the pops from the freezer and dip into the PreGel Coriandolina® Coating – Strawberry. While the coating is still wet, roll the coated pop in the vanilla crumbs until fully coated and return them to the frozen sheet tray.
  9. Garnish as desired.
  10. Return the pops to the freezer for fifteen minutes to fully set.
  11. Place the pops in the freezer and serve.
