Mixed Berry Sorbet

1500g (52.9oz)
1000g (35.3oz)
50g (1.8oz)
50g (1.8oz)
550g (19.4oz)
100g (3.5oz)
20g (0.7oz)
140g (4.9oz)

Method of Preparation

  1. Mix all ingredients together.
  2. Blend with immersion blender.
  3. Let the mix age as desired.
  4. Pour into batch freezer and freezer per machines instructions (or use in Paco Jet).

Frozen Olive Oil Foam

226g (8.0oz)
200g (7.1oz)
60g (2.1oz)
226g (8.0oz)
50g (1.8oz)
10g (0.4oz)
7g (0.2oz)
45g (1.6oz)

Method of Preparation

  1. Combine water, honey and sugar. Heat to dissolve sugars completely.
  2. Add gelatin.
  3. Add olive oil, yuzu juice, and lemon juice. Allow to cool.
  4. Add egg whites and mix until uniform.
  5. Pour into iSi® Gourmet Whip dispenser, and charge with two N2O chargers.
  6. Carefully dispense into liquid nitrogen in small clumps. When frozen, remove from liquid nitrogen and store in freezer until ready to use on plated dessert.

Shattered Raspberries

Method of Preparation

  1. Carefully place fresh raspberries in liquid nitrogen to freeze.
  2. Once frozen remove from liquid nitrogen and break apart into smaller pieces.
  3. Immediately store in freezer until ready to use.

Lemon Confit

300g (10.6oz)
50g (1.8oz)
5g (0.2oz)
20g (0.7oz)
800g (28.2oz)

Method of Preparation

  1. Blanch the lemon peel 4 times.
  2. Combine all ingredients, and cook until lemon peel is tender and liquids have reduced by half.

Method of Preparation

  1. On desired plate, place Frozen Olive Oil foam and Shattered Raspberries.
  2. Top with Mixed Berry Sorbet and fresh berries as desired.
  3. Garnish with Lemon Confit strips and micro greens as desired.
