Method of Preparation

  1. Dry caramelize the sugar and PreGel Magic Sugar (Isomalt).
  2. Deglaze with cream and add PreGel 5-Star Chef Pastry Select™ Peanut Paste, finish with butter.
  3. Food process everything to create an emulsion.
