Method of Preparation

  1. In the bowl of an electric mixer, combine with food color, and mix with a paddle on low speed until incorporated.
  2. Add warm water, and beat on medium-high speed for 4 minutes.
  3. Pipe macaron batter onto a flat sheetpan lined with a Silpat®.
  4. Allow to rest at room temperature for at least 1 hour.
  5. Bake at 135°C / 275°F for 18 minutes, in a vented oven.

Method of Preparation

  1. In the bowl of an electric mixer, combine mix with food color and mix with the paddle attachment on low speed until color is evenly dispersed.
  2. Add water at 50°C/122°F and mix with a paddle attachment for 4 minutes on high speed.
  3. Pipe onto parchment or Silpat® lined sheet pans.
  4. Allow to rest at room temperature for 60 minutes.
  5. Bake at 260°F-270°F/126°C-132°C with oven vent open* and fan speed on low to medium, for about 18 minutes or until done.
Notes to Consider: *If your oven does not have a vent to open, continue with standard baking instructions plus: halfway through baking, gently crack open the oven door to allow steam to escape for about 20 seconds. Close the oven door gently and continue baking per standard instructions until macarons are done.
