Torrone Graham Cracker Crust

50g (1.8oz)

Method of Preparation

  1. Combine all of the ingredients in a food processor.
  2. Press evenly into the bottom of an 8-inch cake pan.
  3. Bake at 350°F for 5 minutes.
  4. Allow to cool to room temperature.

Cheesecake

175g (6.2oz)
2.4g (0.8oz)
145g (5.1oz)
15g (0.5oz)
78g (2.8oz)
8g (0.3oz)

Method of Preparation

  1. In a mixing bowl with the paddle attachment, cream together the cream cheese, sugar and salt.
  2. Add the eggs and yolks and mix until smooth.
  3. Add the cream and and mix until smooth.
  4. Pour into an 8-inch cake pan with the Torrone Graham Cracker Crust. Bake in a water bath at 250°F for about an hour or until set.

Torrone Glaze

100g (3.5oz)

Method of Preparation

  1. Combine both ingredients and blend together in a food processor until the texture of the is very fine and well blended with the .
  2. Spread on the top of the cooled Cheesecake in an even layer with a small offset spatula.
  3. Garnish the Cheesecake as desired.
