Hot Process - Intermediate

3000g (105.8oz)
300g (10.6oz)
500g (17.6oz)
60g (2.1oz)
150g (5.3oz)
150g (5.3oz)
100g (3.5oz)
200g (7.1oz)
60g (2.1oz)
450g (15.9oz)

Method of Preparation

  1. Bring Bourbon #1 to a boil, and reduce by half.
  2. Combine reduced Bourbon #1 and all other ingredients except banana bread in a large plastic bucket.
  3. Mix well for 2-3 minutes using an immersion blender.
  4. Heat mixture to 85°C/185°F.
  5. Place in batch freezer and process according to machine’s instructions.
  6. When extracting the gelato, fold in the cut pieces of banana bread.

Cold Process - Beginner

100g (3.5oz)
200g (7.1oz)
60g (2.1oz)
450g (15.9oz)
