Ingredients

105g (3.7oz)
315g (11.1oz)
42g (1.5oz)
105g (3.7oz)
105g (3.7oz)
10g (0.4oz)
2500g (88.2oz)
500g (17.6oz)

Method of Preparation

  1. With an immersion blender, combine the first seven ingredients.
  2. Mix well for 2-3 minutes.
  3. Place in Hot Process machine and follow the machine instructions.
  4. Once fully heated, extract the hot base from the machine and scale out the amount needed (2,500g/88.2oz) and add in the . Blend together with an immersion blender until the chocolate is fully melted.
  5. Place in a batch freezer and process according to the machine instructions.
