Method of Preparation

  1. In a mixer with the whip attachment, combine the almond flour and sugar; gradually add the eggs and whip for 3 minutes on high speed.
  2. At a lower speed, add in the melted butter and mix until homogenous.
  3. Add in the flour and mix until just combined.
  4. Place the batter in a piping bag and fill a round savarin Flexipan® mold 2/3 full. Cover with a Silpat® or parchment paper.
  5. Place a cooling rack on top of the Silpat® or parchment paper and bake for approximately 20 minutes at 320°F/160°C.
  6. Cool for 5 minutes before unmolding.
  7. Use as needed in final assembly.
