Toasted Marshmallow Gelato

Method of Preparation

  1. Combine all ingredients in a large plastic container.
  2. Mix well for 2-3 minutes with an immersion blender.
  3. Place in Hot Process machine and process according to machine’s instructions.
  4. Place the mixture in a batch freezer and process immediately according to machine instructions.
  5. Use as needed in final assembly.

Method of Preparation

  1. Combine both ingredients in a plastic container.
  2. Microwave on high in increments of 30 seconds until the mixture is fully melted.
  3. Use as needed in final assembly.

Method of Preparation

  1. Fill a ½” sphere mold with . Place in blast freezer and freeze until completely hardened.
  2. Pipe the extracted Toasted Marshmallow Gelato into a 2” silicone sphere mold, making sure to place an unmolded sphere of the in the center of the sphere. Freeze until completely hardened.
  3. Unmold the large sphere of Toasted Marshmallow Gelato and place on top of a waffle cone.
  4. Immediately dip the cone into the melted Graham Cracker Shell at a temperature of 30°C/86°F, making sure to completely dip the gelato sphere. Sprinkle a small amount of crushed graham crackers on the shell and allow to set.
