Mint Meringue

100g (3.5oz)
300g (10.6oz)
100g (3.5oz)
150g (5.3oz)
400g (14.1oz)
20g (0.7oz)

Method of Preparation

  1. Blanche the mint in boiling water, then shock in ice bath. Reserve the blanching water.
  2. Blend the mint and water well, and then pass through a sieve.
  3. Combine the last four ingredients with the mint puree and mix well. Allow the mixture to rest for 30 minutes.
  4. Place mixture in bowl of a stand mixer and using the whisk attachment, whip on high speed until stiff peaks are obtained.
  5. Use as desired.
